Celebrate Spring and Summer with Fruit! And a Simple Sweet Recipe

Summer means many things: warmer weather (or very hot), longer days, more sunshine, and lots of fresh produce! One of the ways I like to use up the summer bounty is by tossing some fruit into an easy and healthy crisp! I was inspired by our Farmer's Market stationery, featuring cute summer fruit illustrations.

Easy Berry Crisp

Ingredients

  • About 4 cups berries, such as blueberries, strawberries, blackberries, and raspberries.
  • 1 cup white whole wheat or whole grain flour
  • 1/2 cup roughly chopped pecans or walnuts
  • 3 Tbsp honey
  • 1 tsp cardamom
  • Sea salt
  • 4 Tbsp cold butter (or use coconut oil for vegan option)

Instructions

  • Preheat oven to 350 degrees and butter an 8x8 (or similar size) baking dish.
  • Add fruit directly to the dish as you chop it and spread until flat. Add in a pinch of salt and the cardamom.
  • To a mixing bowl add almond meal, nuts, honey and butter or melted oil and mix until all of the butter is evenly distributed.
  • Add to the fruit in an even layer on top.
  • Bake for for 40-45 minutes or until the fruit is bubbling and the top is crisp and golden.
